For my diet adjustment for a week, I had decided to choose on becoming a vegetarian. The best way to describe my diet would've been a Pesco-vegetarian, where I would still eat fish and vegetables while avoiding red meats and dairy products.
Recipe Being Chinese, tofu is very prevalent in our cuisine and I have grown to absolutely love the texture it brings. My father tends to purchase a higher quality (yet slightly more expensive) package of tofu. It is softer and more delicate than the regular tofu and has to be handled more carefully. My father had used:
1 pack of Tofu, cut into cubes, steamed 1 bag Choy sum (Chinese Flowering Cabbage) Garlic Ginger Chicken Stock/Broth Salt to taste Soy sauce
The choy sum is stir fried separate and the steamed tofu is placed on top of the vegetables with some soy sauce after. Steamed tofu my favourite method for cooking tofu as it retains its moisture and where it doesn't ruin the beautiful soft texture of the soft tofu.
My Diet of the Week For my diet for the week, I had resorted to eating a lot of vegetables which include broccoli, choy sum, bok choy and many more. I had consumed salmon, steamed tilapia, tofu and shrimp which made up for the lost protein. During the mornings and evenings, I enjoyed some granny smith apples for breakfast and as a snack. Being lactose intolerant, I tend to avoid dairy milk and I've recently turned towards almond milk which is a great dairy alternative!
End of Week Reflections After a week of not eating red meats, I did not really mind it at all. Having a Pesco-vegetarian based diet helps you focus on eating more vegetables which provide copious amounts of vitamins and dietary fiber. Red meats such as beef and pork are both amazing products which I both love, but avoiding it didn't have any effect on me. For me, fish such as salmon is a great substitute for red meats and provides more essential nutrients such as omega-3. For dairy, almond milk tastes great and is great for someone who is lactose intolerant like myself.
Good or Bad Choice? I think this diet change would be very easy for me as I don't prioritize meat in my diet. What I did for this week was very easy for me and I would do it again without a doubt and even for a longer period of time.
